Ponnganti Aaku is rich in iron. This is mainly available only in South India. It is known as Water Amaranth, Sessile Joy Weed or Dwarf Copperleaf.
Ingredients:
- 3 Cups Ponnaganti aaku/
- 2 Tablespoon Red Gram
- 1/4 Teaspoon Mustard seeds
- 1/4 Teaspoon Cumin seeds
- 2 Red chillies
- 5 to 6 Curry leaves
- Salt to Taste
- 1/2 Teaspoon Turmeric powder
- 1/2 tsp Asafoetida(hing)
- 2 Tablespoon Oil
Procedure:
- Discard ponnaganti aaku from the stem and chop it finely.
- Cook red gram till it is half boiled, drain excess water.
- Heat oil in a kadai, add a pinch of asafoetida, put mustard seeds, cumin seeds, curry leaves and red cillies.
- Once they start splutter add chopped ponnaganti aaku, salt and turmeric powder.
- Sprinkle a little water. Cook for 10 minutes or till the leaves cooked completely.
- Once the leaves cooked add half boiled red gram to it.
- Stir well and cook for 2 minutes.
- Serve ponnaganti aaku kura with hot rice.
