Ivy Gourd or Coccinia is popularly known as dondakaya in Telugu. I like this vegetable very much but cutting it to make curry takes very long time. It is liked by all only when we make stir fry.
I prefer only stir fry but a stuffed with grated coconut or cooked with some light masala is also a good side dish for rice.
We must select only thin and light green color ivy gourd. Fat and dark colored gourds are not good for stir frying.

Cooking time: 30 mins

Serves: 4 people
Ingredients:
- 500 grms Ivy Gourd or Coccinia
- Salt to taste
- 2 tbsp Oil
- 1 tsp Red Chilli Powder
Procedure:
- Wash ivy gourds under running water. Keep them in a vessel with filled with water.
- Cut the edges and then cut them into rounds.
- Heat oil in a kadai till the fumes come up.
- Add ivy gourd pieces and cover it.
- Fry them in the low flame till they turn into brown shade. do not burn.
- Once they turn into brown shade and crisp, add salt and red chilli powder.
- Do not increase the flame while frying, as they may burn and all the pieces fry uniformly.
- Serve ivy gourd stir fry with rice or serve it as a snack item.
