Millets in our diet plan are very important, so to keep it interesting and tasty we make different recipes with them like upma, dosa, kheer, and khichdi. Recipes with millets are easy to make, and of course tasty and healthy too.
They are rich in proteins, carbohydrates and easily digestible. This millet used as a substitute for rice. It helps in keeping the blood sugar under control.
Foxtail millet upma or Korra biyyam upma recipe is another very interesting and healthy recipe. It is made with korralu and lots of vegetables. I have already posted kheer with foxtail millets, you can check out for the recipe here. Upma recipe I made it with my own idea, after serving it, I googled it, found different ways of making it. I am fond of trying new recipes with millets. Though I take a very long gap between making of different millet recipes.
Foxtail Millet Upma -- Korra Biyyam Upma
Ingredients:
- 1 Cup Foxtail Millet/Korra Biyyam
- 2 and 1/2 Cups Water
- 1 Large Carrot
- 1 Large Potato
- 1 Large Onion
- 5 to 7 French Beans
- 1 Large Capsicum
- 1/4 Cup Peas
- 1 Tomato
- 3 Green Chillies
- 3" Long Ginger
- 5 to 7 Curry Leaves
- Fist ful Coriander Leaves
- Salt to Taste
- 1/2 Teaspoon Turmeric Powder
- 2 Tablespoon Oil
- 1 Teaspoon Mustard Seeds
- 1 Teaspoon Cumin Seeds
- 1 Teaspoon Blackgram
- 1 Teaspoon Bengal Gram
Procedure:
- Chop all the vegetables, carrots, potato, onion, tomato, capsicum and french beans.
- Wash and soak foxtail millet for half an hour. This increases its volume and also cooks faster.
- Heat oil in a kadai, add mustard seeds, cumin seeds, blackgram and bengal gram.
- Allow them to splutter and saute till the dals turn golden.
- Add onions and tomatoes. Fry them till the onion turn traslucent.
- Add in all other vegetables, curry leaves and coriander leaves.
- Fry them for 2 minutes. Add salt and turmeric powder to it.
- Add 2 and 1/2 cups of water and let it boil.
- Meanwhile, drain excess water from the millets in a colander or using juice strainer.
- Add the drained millets to the cooked and boiled vegetables. Keep it covered.
- Mix it well and allow this to cook for ten minutes.
- Check whether the millets cooked or not by pressing them between fingers.
- Let the moisture goes off and the millets cooked completely.
- Serve foxtail millet upma with any spicy pickle or we can have it as it is also.
